What to expect from our meeting: theory and practice in the kitchen
Theory
Starting from you and now
We will start from NOW, your lifestyle, your way of eating and your routine. I ‘d like to hear a bit of your story, your overall health and why you have decided to come to me. We will then discuss your preferences, your challenges, goals and your budget, if relevant.
Why a plant based diet is the best choice for you
I can explain and show you WHY a plant based diet is the best choice in terms of improving your own health.
We will speak about carbs, protein, fats, fibre as vitamins and some minerals. Their role, their function and where they really are, and how much you really need!
We will see how to compose your plate, how a nutritionally balanced meal should be. There is so much disinformation out there, controversial, misleading, inaccurate, often wrong. Perfect to create confusion.
I believe that education is the best tool to empower people to make the best choices for themselves.

My aim is not to give you a strict dietary plan to follow, but rather to work together with you to make you able to build the perfect and durable plan for yourself.
Actions
In the first meeting, we will make a sort of plan which you can still personalize and make it different week by week according to what you feel like that day, what is available in your fridge, how much time you have that week for cooking.
The ideal it would be to have a follow up meeting after 2-3 or 4 weeks, it depends on how you are feeling about it, your needs, your challenges, how confident you are in this new journey. Everybody is different, everybody is unique.
But I believe that after a few follow up meetings you will be more confident to build up that perfect and durable plan for you, because you will have a lot of examples, nutritional information, practical skills and tips to support your choices.
And all, without counting calories, reducing portions, feeling hungry all the times, being afraid to fail and feeling guilty to have allowed yourself a “treat”.
BUT just making the right choices, being a bit inventive in the kitchen and being open to new types of plant based foods, which you might still not have tried in your life.

You will see then how a plant based diet will easily become for you a natural, colourful, enjoyable life style,
not a strict scheme that has to be followed and eventually will be dropped cause unsustainable.
Practice
Part of our meeting will also be dedicated to PRACTICE.
Yep, we will be cooking together in the kitchen, preparing some simple delicious healthy vegan food!
This will make you more confident and trust me, more fascinated and surprised by what this new plant based world can offer to you.
During our first meeting, we will make 3- 4 quick recipes, which I believe will make your life easier during your busy week.
Then, if there is something you would like to dive into more, for example sweet healthy treats, dips, sandwiches fillings, creamy salads, creamy sauces, chillies and so on, we can explore it in a next follow up meeting.

Here some of the recipes we will make together and more. Some, which take a bit longer preparation, but you will soon be able to make on your own!!
